Matthiola Incana - Stocks

These frilly, ruffled, clove scented blooms are reminiscent of an English cottage garden and are available from May to September, found in pretty pastel shades but also in aubergine and dark purple.

Buying tips

Look for strong, straight stems, bright, crisp foliage - even though you will need to remove most of it, a good indicator of freshness, avoid yellowing leaves.

If buying from a supermarket, they won't be as tall ,look out for overcrowding in buckets, they are susceptible to botrytis ,a grey/white fungus - a polite reminder that supermarkets sell flowers that are a different quality to those available from a florist.

Care

Remove foliage, cut stem at an angle -then up the stem - a centimetre is enough . Add flower food. Place in fresh water, change every two days, keep out of the sun as with all flowers.
